Fullblood Wagyu Halves and Wholes


Black Wagyu is a Japanese cattle breed that was originally used in agriculture as a draft breed. Their increased levels of intramuscular fat cells support high endurance levels which favored them for this job. It was later discovered these fat cells provided higher marbling content to give a rich flavor and tender cut. Wagyu also has 50% higher monounsaturated fats and three times more Omega 3’s than commercial beef. These healthy fats are benefitial in many ways, including lowering cholesterol levels. With its high marbling and a melting point lower then the average human body temperature, Wagyu beef will melt in your mouth.

Only 3% of all beef in the US is graded Prime, and 90% of processed Wagyu make this grade.

There are 93.8 million cattle in the US. Of these, there are only 30,000 Wagyu influenced (cross-bred) cattle. 5,000 of them are full-blood.

  • Each steer will include approximately 13 Tenderloin steaks, 13 Sirloin Steaks, 13 Ribeye steaks, 13 New York Strips, round steaks, roasts, 2 Try tips, 2 Briskets, and 240 lbs of ground beef. You can request a custom cut sheet.
